The chef onboard will of course be able to whip up some fabulous dishes with fresh local ingredients.Thailand and Malaysia are well known for their varied and delicious cuisine. Here's something to get your mouth watering at home:
SOM TAM: Papaya Salad (serves two)
1. Pound 3 cloves of garlic, 6 bird's eye chillies and 2 T of bolied and drained dried shrimps into a coarse paste, using a mortar and pestle.
2. Add 3 cups of shredded green papaya, 2 long green beans (chopped into 2cm lengths), ¼ cup of shredded carrot and 3 cherry tomatoes (cut in half), and gently mash together.
3. Season with 2 T lime juice, 1 T fish sauce and 1T palm sugar and bruise until well mixed.
4. Serve sprinkled with 2 T roasted peanuts and accompanied by fresh vegetables.
